Happy new year one and all, hopefully your Christmas festivities were all as you wished. If there are still some of those after dinner mints lurking in the back of the cupboard and the novelty of the chocolate goodies has now worn off, why not make some after dinner mint muffins? The recipe will use them up, you can then freeze them and bring them out when the chocolate urge returns. Here’s the recipe for after dinner mint muffins.

Line a twelve hole muffin tin with paper cases and set oven to 190C/Fan 170/ Gas mark 6

Ingredients

9 oz (250g) plain flour
3 level teaspoons baking powder
4 oz (110g) caster sugar
5 oz (140g) after dinner mints, roughly chopped into smallish pieces
7 fl oz milk
4 tablespoons sunflower oil
1 egg, beaten

Method

Measure flour and baking powder into a bowl with sugar and stir together.

Tip the after dinner mints into the flour, mix and stir them in, making sure they’re well distributed evenly into the flour and breaking up with the spoon any pieces that seem a bit too big.

In a jug beat together the milk, egg and oil.

Stir the liquid ingredients into the dry, without beating, until there is no visible flour (scrape up from the bottom) don’t over mix.

Spoon mix into cases and bake for about 20 mins, until light brown, check with a cocktail stick, if it comes out clean they are done.

Remove onto a wire cooling tray.
